The maturation of the tomme d’Estaing lasts 2 to 6 months in a natural cellar which gives the cheese a real finess in taste. The cheese is smooth, firm and without any openings in the dough. It is sweet and has some discreet pineapple and sheep aromas.
Soft texture; similar to Saint Nectaire.
